Cookery programmes

New Zealand Certificate in Cookery (Level 3)

Are you interested in Mahika Kai? Do you have some experience with traditional food production and harvesting? Graduates of this certificate will have the skills and knowledge to contribute to future Mahinga Kai development of whānau, hapū, iwi, and communities.

Begin your journey from cook to chef in this programme available at both our Dunedin and Central Otago campuses. Involving lots of hands-on, practical cooking in our training kitchens, and a work experience opportunity, this qualification will expand the skills you have developed in a Level 3 cookery programme. Plus, you can study this programme FOR FREE in Central Otago from July 2020 (you'll just need to cover your student levy and equipment).

New Zealand Diploma in Cookery (Advanced) (Level 5) (Cookery)

This practical qualification includes lots of hands-on cooking in our training kitchens and a work placement in a local business. You will develop a range of cookery, hospitality management, communication, leadership and critical thinking skills, and benefit from the chance to source your ingredients straight from the campus nursery, modern glasshouses and vineyard. Plus, you can study this programme FOR FREE in Central Otago from July 2020 (you'll just need to cover your student levy and equipment).

New Zealand Certificate in Food and Beverage Service (Level 3) (Café Services) (Bar Services)

Gain the essential skills needed for working in the bar and café sector of the hospitality industry. Our on-site cafe and restaurant training facilities will enable you to gain important hands-on experience which you can then put into practice during an industry work experience placement.

Want to advance your beer or cider brewing skills? Build on your experience in the brewing industry with this online programme. You'll hone your skills and graduate with the ability to manage brewing processes and production quality, and provide technical support to a brewing operation.

Are you a brewer with significant skills and experience? If so, you could be assessed for this qualification through our Independent Learning Pathway process delivered via Capable NZ. Achievement of this Level 6 Diploma will demonstrate that you have the skills and specialised knowledge to develop and independently brew to a professional level in a commercial or non-commercial environment.
